A restaurant opening and closing checklist

A restaurant runs on small things done in the same order every day. Written down, they stop depending on who is on shift.

A daily restaurant routine has three parts: an opening check of the kitchen, stock, cash and printer; a service rhythm with one person watching old tickets and sold-out dishes; and a closing that counts the drawer, records waste, secures food and plans tomorrow’s prep.

The checklist below is a starting point. Change it to fit your kitchen, and keep it to what people will actually do.

During service

  • One person watches the oldest ticket, not only the newest.
  • A dish that runs out is switched off at once, so a QR order cannot ask for it.
  • Every void, free plate and big discount gets a reason as it happens, not at night.
  • A replaced dish is written down with why, because the guest paid once and you cooked twice.
  • Food at the pass is carried and marked handed over, so a table is not left waiting.

The cash count is explained step by step here.

Once a week

  • Count your ten most expensive ingredients and compare with what should be left.
  • Read the voids, free plates and discounts by person.
  • Check your top dishes’ cost against their price; the food cost calculator does the sum.
  • Deep clean one area, in rotation.

On the bill and in the kitchen

FSSAI has required food businesses to print their licence or registration number on bills. Hygiene rules for your licence are FSSAI’s, and they are not reproduced here: read them for your own kind of business. This checklist is a working routine, not a compliance document.

How Nivasik handles this

Most of the routine above leaves a record in Nivasik without a second notebook.

  • Open the day with a shelf count, if you switch that on per counter.
  • Switching a dish off stops it on the counter, the waiter’s phone and the table QR.
  • Voids, free plates and big discounts ask for a reason.
  • A dish made again is written down, with its cost.
  • Closing the day compares the drawer with what you count.
  • A sales forecast says what usually sells tomorrow, from the same weekday of your last four weeks.

What it does not do

  • It does not check fridge temperatures or hygiene, and it is not a compliance record.
  • Kitchen tickets need the internet.

Questions people ask

What should a restaurant check before opening?

Kitchen safety, food dates, fast-moving stock, opening cash, the printer, the tables and who is in.

What is on a restaurant closing checklist?

No open bills, the drawer counted, waste recorded, food covered and dated, gas off, and tomorrow’s prep planned.

How often should stock be counted?

Fast and costly items daily or weekly, and everything at least monthly. The gap tells you where it goes.
